I’m sitting here, drinking my almond milk latte, and thinking about yesterday.  My latte tastes pretty good.  No creaminess to it like my fat-free lattes, but it’s good.  I like that it’s healthy, which I suppose, makes me a quasi hippie.

breakfastBreakfast.  I started the day by cooking breakfast for my kids.  Yes, I can see the shock on your face.  My kids were looking at me like I was from another planet, wondering what alien life form has taken over their mother’s body.

Scrambled eggs and toast.  No, I did not make the bread from scratch.  It came out of a plastic bag.  We’re almost out of it, so we’ll be making our own or buying it fresh at Whole Foods.

wonder-bread-wrapper-jellyfish-plastic-crapOh, plastic crap, why do I hate thee?  My whole dislike of plastic crap could possibly be attributed to bread wrappers.  I was stung several years ago by a school of jellyfish.  A few years later, I was snorkeling in some less-than-clear water, cautiously avoiding jellyfish, when I came upon what I thought was a jellyfish.  As I was swimming away in a panic, my brain was processing what I had seen rubbing up against my arm.  Wait a minute.  Jellyfish do not advertise for bread companies.  It was a plastic bread wrapper.  I still miss the beach, but not all of the disposable crap floating around in it.

i won this iphone standI won!  I went to a Meet Up in Dallas a few days ago and won an M2 smart phone stand.  It came in a disposable box, so I set it on the table.  My son has been pestering me to death to open the box and use the stand.  Since my kids are not having to participate completely, I gave it to him.  When he was little, he would play with boxes.
Now, he leaves them laying around, if he hasn’t found an art project for them.  “Please, put it in the recycling bin!”  I also gave my kids the Doublemint gum since it’s individually wrapped in wax-coated paper, inside a cardboard box, all wrapped in plastic.  Yes, they have all of their disposable bases covered.

I’m off to make another latte and get to work.  My goals of the day, as related to the challenge:

  1. Cat litter.  This is getting on my nerves.  I must find something or make something.  Yeesh!
  2. Seriously ponder the purchase of a new (used) car.  This makes me want to throw up.  My car didn’t want to start yesterday.  God, if I’m not supposed to drive it 3,000 miles soon, you need to kill it.  My car has been in my life longer than any man and I’m really attached to it.  And, I don’t want a car payment.  Ugh.
  3. Keep working on food options.  This is good stuff, just time consuming.  And, I’m craving a bag of chips.

Oh, and here’s a couple of photos from the almond milk process.
